How can two caviars of the same type be so different?
This is one reason caviar can be difficult to choose with confidence: two tins carrying the same variety name can offer remarkably different experiences. The name identifies the type of caviar, but it cannot tell you the quality of the decisions made throughout the production process.
One of the most important factors is when the roe is harvested.
Much like a Master Winemaker judging when grapes have reached perfect ripeness, a Caviar Master must recognize when the roe has reached its peak. Harvest it too soon, and the flavor may be underdeveloped. Wait too long, and the pearls can soften and lose their signature pop.
At the farms we select, experienced Caviar Masters closely monitor the sturgeon as the roe matures. Modern aquaculture provides valuable tools, including ultrasound and other assessments, but experience and judgment remain essential. Technology can monitor what is happening, but the Caviar Master must still interpret all the factors and recognize when the moment is right, a skill refined over years.
